DD's Healthy & Moist Cornmeal Blueberry muffins

This recipe is very easy to make, healthy and even kids enjoy them - I served it to my friend's 8 year old and she loved it.

Grease 1-12 pan muffin tin and set aside.
Heat oven at 375 degree and bake for approximately 20-25 min.

In a large bowl mix the following dry ingredients and set aside:

  • 1 cup all purpose flour
  • 1 cup organic oat bran flour
  • 1/2 cup wheat germ
  • 1 cup cornmeal
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tbsp baking soda
  • 1 1/4 cup frozen blueberries
  • 1 tsp all spice (optional)
  • 1 tsp cinnamon (optional)

In a smaller bowl mix the following ingredients:

  • 1/2 cup vegetable oil or 1/2 cup melted margarine
  • 2 eggs or 1 cup egg whites
  • 1 tbsp fresh grated orange rind
  • 1 tsp vanilla

Add liquid ingredients to dry, mix until dry is combined but not stirred - lumpy! Spoon into greased muffin tins - 3/4 full and bake until tops are golden brown or test for doneness. Cool for 5-10 min and remove from pan. Serve with bit of butter or great on its own! Excellent for freezing up to 2 months
