DD's Healthy Muffin Mix

Mix and set aside:

  • 1 cup flour
  • 1 cup quick oats
  • 1/2 cup wheat germ
  • 1/2 cup oat bran
  • 1/2 cup wheat bran
  • 3/4 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon (optional)
  • 1/2 tsp nutmeg (optional)
  • 1/2 tsp salt
  • 1/2 cup sunflower seeds
  • 1/2 cup walnuts or slivered almonds
  • 1 cup dates or cranberries or raisins

Mix together:

  • 2 eggs
  • 1/2 cup light olive oil (extra virgin tastes too strong in this recipe)
  • 1 cup milk (I use skim or Soya)
  • 2 grated carrots

Add wet mixture to dry mixture and mix thoroughly.
Scope into greased muffin pan and bake at 350 for approximately 25-30 min
Test for doneness around 20 min.

Excellent for freezing up to 2 months
