DD's Healthy Muffin Mix
Mix and set aside:
- 1 cup flour
- 1 cup quick oats
- 1/2 cup wheat germ
- 1/2 cup oat bran
- 1/2 cup wheat bran
- 3/4 cup brown sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon (optional)
- 1/2 tsp nutmeg (optional)
- 1/2 tsp salt
- 1/2 cup sunflower seeds
- 1/2 cup walnuts or slivered almonds
- 1 cup dates or cranberries or raisins
Mix together:
- 2 eggs
- 1/2 cup light olive oil (extra virgin tastes too strong in this recipe)
- 1 cup milk (I use skim or Soya)
- 2 grated carrots
Add wet mixture to dry mixture and mix thoroughly.
Scope into greased muffin pan and bake at 350 for approximately 25-30 min
Test for doneness around 20 min.
Excellent for freezing up to 2 months
