DD's Low Fat & Low Sugar Banana Bread Recipe
Mix together and set aside
- 2 cups flour
- 1/4 cup flax seed
- 1/2 cup brown sugar
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 cup chopped walnuts
- 1 grated carrot
- 1/2 cup dried cranberries
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Mix together with a wooden spoon
- 3 ripe bananas mashed
- 1/3 cup plain yogurt
- 1/3 cup margarine melted and cooled
- 3 eggs slightly beat
Add liquid ingredients to dry ingredients and fold together with a spatula until just combined. Grease the bottom of a loaf pan and pour in mixture. Bake at 350 for 55-65 mins. Cool 5 min before slicing.
Excellent for freezing up to 2 months
